Recipe idea

Crispy Peas and Peas balls

INGREDIENTS

  • 1 big box of peas and carrots in steamed aucy (530 g: drained net weight)
  • 2 tablespoons olive oil
  • 1 peeled white onion
  • 1 clove of peeled garlic
  • 2 eggs
  • 1 tablespoon of flat parsley
  • 2 tablespoons milk
  • 80 g flour
  • 3 tablespoons fine bread crumbs
  • 50 cl of special frying oil
  • Salt and freshly ground pepper

METHOD

  1. Drain the peas and carrots.
  2. Cut the carrots in 2 or 3 pieces.
  3. In a robot, coarsely mix the onion, garlic, olive oil and flat parsley. Transfer to a bowl and reserve.
  4. In a salad bowl, beat the eggs with the milk, then gradually incorporate the flour with a whisk to obtain a homogeneous paste. Incorporate the previous preparation with a spatula then the peas and carrots. Cover with a film of food and store in a cool place for half an hour.
  5. In a large saucepan, heat the special frying oil. Form small balls with the dough and roll them in the breadcrumbs. Fry them two by two until golden brown. Drain them on a sopalin before serving them with a seasonal salad.
