Description
Pont-l’Évêque is a soft cheese made from cow’s milk, with a washed or brushed rind, on which a slight bloom develops during ripening. Its whitish to orange rind harbors a supple, ivory to straw-coloured paste with aromas of cream and barn.
It acquired its square shape in the 17th century in order to differentiate itself from other cheeses from the Pays d’Auge, whose common ancestor is Angelot.
It has had its PDO protected designation of origin since 1996.
