Raclette is a cheese made to be melted. Its name comes from the French verb “racler”, meaning ‘to scrape’. The cheese also gives its name to the dish raclette, which is an incredibly delicious and simple plate of boiled potatoes, pickled onions and cornichons (gherkins), over which is scraped the melted cheese.
While a lot of other cheeses split when melted, meaning the fat oozes out of the melted cheese, the fat in raclette doesn’t separate.
Raclette is washed with a brine solution that encourages a sticky rind, resulting in a paste that is smooth and sweet, supple and silky. It can be used as a table cheese, but raclette is at its best when melted, revealing its distinct aroma, nutty flavour and unctuous texture.
