Unlike its industrially produced counterparts, this cheese is matured under a delicate layer of wrinkled yellow Geotrychum mould, a rarity found naturally in unpasteurised cow’s milk. While challenging to handle, the mould finds a nurturing environment within the poplar wooden box that ensures the cheese’s creamy consistency and distinctive flavour profile.

NOTE: Do not be alarmed if you spot fluffy white clusters, or ‘bunny tails,’ on the surface of this cheese. These natural growths are Penicillium Candidum, a mould similar to those found on Brie and Camembert cheeses. Their presence is a sign of the cheese’s proper maturation process and poses no food safety concerns.
