A typical Sète dish, Tielles are a quintessential Sète specialty. The filling is made with premium ingredients.
For a true Tielle à la Sétoise, use 350g of bread dough. Divide the dough into two 175g pieces and flatten them into two 30cm circles. Roll out the first piece of dough in an oiled 28cm pan and prick the bottom well with a fork. Then fill the pan with the filling and cover it with the second piece of dough, taking care to seal the entire edge by moistening with a little water.
To achieve the typical Tielle edge (sealing the edges), cut the entire edge with a knife every 2cm and fold every other strip of dough toward the inside of the pan. Don’t forget to prick the top and brush with oil again, which, during baking, will mix with the tomato sauce, which, when spread with a brush, will give it that beautiful orange color.
Variation: You can use 2 rolls of puff pastry, bake for 25 to 30 minutes in the oven at 210°C.
Store in a dry, dark place at room temperature. After opening, refrigerate for 2 to 3 days.
