Granite – Traditional Clothbound Somerset-Style Cheddar
Discover Granite, a clothbound cheddar aged 10–12 months in our cheese cellars, crafted in the traditional Somerset cheddar style. Using multiple layers of cotton cloth and lard, this method protects the cheese while allowing a complex natural rind to develop, enriched by a community of beneficial yeasts, bacteria, and moulds.
Appearance & Texture:
Granite has a dense, slightly crumbly semi-hard paste with a mid-yellow colour and a striking mottled grey-brown cloth-covered rind, reminiscent of granite stone. Moist and buttery yet crumbly, it offers a satisfying mouthfeel.
Flavour Profile:
Experience layers of flavour with deeply savoury notes, grassy and buttery undertones, a touch of acidity, earthy umami complexity, and excellent length of taste.
Serving Suggestions:
Perfect as part of a cheese board with crusty bread or crackers, in a ploughman’s lunch with pickles or relish, or paired with something sweet like fruit bread, Eccles cake, or fruit cake. Ideal for toasties, lightly grilled toppings, grated into savoury custards or béchamel sauces, or sprinkled over buttered potatoes and seasonal roasted vegetables. (Contains animal rennet and lard; not suitable for vegetarians.)
