One might think it’s hard to get excited about beans, but when it comes to flageolets, there is nothing that compares. They have a delicate nutty taste and creamy texture – the nutty taste is
mentioned in the French description but missing from the English translation. They can be served as a dish on their own but I find they are the perfect accompaniment to nice pork sausages, such as saucisse de Toulouse, saucisse de Gascogne and even Boudin Blanc. Absolutely perfect for when you want to prepare a simple, quick yet tasty meal.
