A bit of history: The origin of the delicious sauerkraut dates back to the 3rd century BC, to ancestral China, where workers in isolated villages ate fermented cabbage, which contain important vitamins, to resist the cold weather and arduous work. The now famous recipe crossed Central Europe through conquests and settled permanently in Alsace around the year 451.
